Zucchini/Yellow Squash sticks
1 cup Bread crumbs*, flavored with 2 tablespoons parmesan cheese, and 2 teaspoons of assorted fresh herbs. You can use oregano, basil, chives, and/or parsley. Toss to combine, adding salt and pepper to taste.
1 cup All purpose flour
2 beaten eggs
Cut 3 medium-sized squash into evenly-sized spears. Dip first into flour, then egg, and, lastly, the bread crumbs.
Preheat your oven to 475 degrees.
Arrange the spears on a baking sheet covered with parchment**, or lightly sprayed. Bake for about 20 minutes, until brown and crispy.
Serve with marinara sauce, salsa, or whatever gets your kids to eat vegetables!
* I like to use panko. It's a coarse bread crumb that gives extra texture, and is especially tasty in a recipe like this one.
** Kitchen tip: buy parchment sheets. They allow items to cook without sticking, and make cleaning sheet pans easy.
