Sauteed Spinach

Spinach, like most dark leafy greens, is extremely good for you. This vegetable provides vitamins, iron, and antioxidants.
Cooking for a short time will blend your ingredients, while still retaining all of the goodness.

Add olive oil and 2-3 tablespoons of garlic (or as much as you like or dare) in a saucepan, and cook for 3-5 minutes to soften the garlic. Add in about 12 ounces of greens, turning frequently until coated, and saute for about 8 minutes, until wilted. Add a dash of kosher salt, a grind of pepper, and, if you like, a sprinkle of parmesan cheese.

Enjoy as a wonderful, nutritious side dish to any meal!
