Linda's Spring Asparagus
Linda believes that the simpler you prepare fresh asparagus, the better. Wash it well, and trim only a bit from the bottoms, as fresh Spring asparagus is very tender.
Here are LInda's three favorite ways to enjoy this early Spring vegetable:
• Lay on a sheet pan in a single layer. Drizzle with olive oil. Sprinkle with salt & pepper, adding parmesan cheese if you like. Roast at medium high heat, 395 degrees, for about 20 minutes. Roasting enhances the flavor without leaching any of the vitamins.
• Same method as above, but put them on your grill, turning frequently to avoid burning.
• Blanche the asparagus, by boiling it briefly, chilling it in ice water, and then reheating it slowly. Then, toss it into scrambled eggs, or a quiche.
If you are fortunate enough to harvest fresh asparagus, try it raw, in salads.
