Howard's in the kitchen: Pasta with Tomatoes and Basil
In a medium saute pan, add 1/4 cup of olive oil and 4 cloves of garlic, chopped, heating slowly. Add 4-6 chopped garden fresh tomatoes. Continue to cook at medium heat until the tomatoes break down to a soft consistency. Add a bunch of fresh, julienned basil. Continue to cook for about 10 minutes, allowing the flavors to combine.
Finish by adding cooked pasta of your liking, about 1/2 pound, and toss until coated. Salt and pepper to taste.
Divide into two pasta bowls, or one
! Top with good, grated parmesan cheese, if you like.
Note: No rules apply here. Add more garlic if you like, less basil if you don't like so much, add some parsley if you have it, an onion to the garlic, and saute that as well. You can even add squash or zucchini while you are sauteing the mix. Adding fresh mozzarella cheese before you toss in the pasta gives this already good dish more flavor. If serving more than two people, double the amounts.
