Blueberry Pie
Fresh is best when it comes to blueberry pie! Find a local, organic source, and get picking!
Makes one 9" pie
2 pie shells, store bought or homemade. Note: Store bought pie shells are not cheating! If you have found one that works for you, and is of excellent quality, go ahead and use it for all of your baking needs. These convenience products save time, and often money. The idea is to get into the kitchen and make something from 'almost scratch', that you will enjoy enough to make again, and again.
1 Egg white, whisked with a splash of water
Filling Ingredients
4 cups Blueberries
1 cup Sugar
1/4 cup All-purpose Flour
1/4 teaspoon cinnamon
Combine the filling ingredients, mix well, and allow to sit at room temperature for 30 minutes, mixing often. Fill the bottom crust with filling, and top with the second crust. Crimp edges decoratively. Brush the top crust with the egg white, sprinkle with sugar, and vent top to allow steam to escape.
Bake pie for 50 minutes, at 375 degrees, for about 50 minutes. The top should brown, and the fruit will bubble. Allow to cool, and enjoy with good vanilla ice cream, or fresh whipped cream.
