Kohlrabi is one of those vegetables that is becoming increasingly common at farmers’ markets, and even occasionally the grocery store, but that many folks still don’t know what to do with. It has a mild and sweet broccoli like flavor and a nice crunch and is perfect in a slaw with spicy radishes and sweet/tart apples. This slaw would be great a great accompaniment to your summer BBQ fare!
2 medium kohlrabi
1 bunch radishes
freshly ground black pepper
Wash and trim kohlrabi of root end, stems, and discolored spots. Peel if it is more mature; young tender kohlrabi do not need to be peeled. Cut into matchsticks. This can be done by hand, but is easier with a mandolin (with a handle attachment for safety) or food processor with appropriate blade.
Wash and trim radishes and apples and cut them into matchsticks as well.
Toss the kohlrabi, radish and apple matchsticks together by hand until thoroughly combined. Squeeze the juice of half of a lemon over them and toss until well coated. Drizzle a nice sized glug of olive oil over the matchsticks and sprinkle with a pinch of salt and a few grinds of pepper. Toss to coat and combine.
Serves 4-6 as a side.
