1 1/4 Cups Unbleached All-Purpose Flour
1 Cup bran cereal (flakes or nuggets)
1 Teaspoon Baking Powder
1/4 Teaspoon Baking Soda
3/4 Cup (1 1/2 sticks) butter or margarine, melted
1/2 Cup Brown Sugar
3 Eggs, lightly beaten
1 1/2 Cups peeled, finely-chopped Apple
3/4 Cup shredded Cheddar Cheese
1/2 Cup finely-chopped Walnuts
In a large bowl, mix together flour, bran cereal, baking powder, and baking soda. Set aside.
In another bowl, beat butter or margarine with brown sugar and eggs, until well combined. Fold in apple, cheese, and walnuts. Gently combine this mixture into the large bowl containing the flour and other ingredients.
Turn the batter into a greased 9X5 or 10X5-inch loaf pan. Bake in a pre-heated 350 degree oven for 55-60 minutes, or until the loaf tests as done. Remove from oven, cool 5 minutes, and remove loaf from pan. Cool completely on a wire rack. Enjoy!
