Caldo Gallego is one of the quintessential dishes of Galicia (northwest tip of Spain) consisting of a broth made with all sorts of meats, leafy Collard Greens, Fingerling Potatoes and Cannellini Beans. It is a proper winter warmer and packed with nutrients. Every family has a different variation of the recipe and Arcadia wasn't the exception , she used chicken instead of pork (Gluten Free)
